An article in Self magazine about a foodborne botulism outbreak in California that has caused the hospitalization of at least 10 people who officials say may have eaten contaminated nacho cheese sauce from a gas station quotes John Crane, professor of medicine and an infectious disease specialist, and Thomas Russo, head of the infectious disease division, both in the Jacobs School of Medicine and Biomedical Sciences. Foods that don’t undergo proper processing to kill spores are at an increased risk of causing botulism, Russo said.
