Not everything has come to a screeching halt on campus. The trusty food truck Little Blue is still operating, albeit on a less frequent basis with strict rules on social distancing and face coverings, to serve UB community members still living and working on campus. Dell’s responsibilities in the COVID-19 era include operating the food trucks, the Ellicott convenience store and packaged meal operations. Work is very different these days, she says. “I mostly miss the hustle and bustle. On a typical day, there are hundreds of employees and thousands of guests to take care of. I like to be busy and I like the sort of controlled chaos of working in food service. It’s something different every day and there are lots of challenges to solve throughout. We are operating very slimmed down now, and most of the time it can feel like Groundhog Day. There are times when it is genuinely quiet in the building and that is odd!”
