With spring here and warmer weather on the way, what are your favorite cool treats or recipes?

  • My absolute favorite is the Dairy Queen Pecan Praline Parfait, but since it packs 720 calories per serving, with 260 from fat, I cannot recommend it in good conscience. I only have it for a very special occasion, such as when I get a new grant or a big paper! For daily refreshment, here’s my guilt free favorite:
    Strawberry Coconut Smoothie
    6 servings, 120 cal per serving
    1 cup frozen strawberries, unsweetened
    2 bananas, fresh
    2 tablespoons coconut flakes
    2 small Wegmans fat-free yogurt (any flavor)
    1/2 cup milk (or orange juice)
    Blend strawberries, bananas, coconut flakes and yogurt. Add milk or juice to achieve desired consistency. Enjoy!

  • My favorite cool treat, honestly, is peanut butter cup ice cream. A healthier treat that I can enjoy every day without guilt and with lots of feeling of goodness (fiber, antioxidants, fruit intake) is a homemade smoothie: Frozen strawberries, bananas, sometimes cooked beets or blackberries for a beautiful color, yogurt and a splash of apple juice. A whirl in the Bullet and I’m in fruit-lover’s heaven. Last summer, my husband and I also discovered a fantastic and unexpected recipe involving watermelon, feta and Tabasco sauce.   • When the weather warms up, I like to freeze seedless green grapes as a snack. I also like to create unusual salads from whatever comes in our grocery bag from the Porter Farms Community Supported Agriculture program. I've learned how to use kohlrabi and tomatillos!

I really dig cold soups...gazpacho is delish but so are others cucumber- yogurt and watermelon are a few good ones. I do not have any recipes but check out web sites like cooks.com, Betty Crocker, If you like them as well. Do you have a recipe for your favorite one? I know usually you have to have a food processor of some type to really get them right.
